Microwave Peanut Brittle

 Microwave Peanut Brittle

2 cups dry roasted, salted peanuts

1 cup sugar

1/2 cup light corn syrup

1 teaspoon butter or margarine

1 teaspoon vanilla

1 teaspoon baking soda


Note: Low times are for a 750 watt microwave, while high times are for about a 500 watt microwave. The cooking seems to take most of the moisture out, so if it is undercooked or cooked covered the brittle will turn out rubbery. While cooking, be sure to watch through the glass so that the mixture doesn't bubble over from too much heat.
 


In a glass or ceramic casserole dish, combine sugar and corn syrup.












Microwave UNCOVERED on high for 4-8 minutes.











Stir in peanuts. Microwave another 4-6 minutes.

Blend in vanilla and butter, then microwave another 2-3 minutes.













Add baking soda, stirring GENTLY until light and foamy.





 

Spread immediately on a foil sheet.


Allow to cool, then carefully peel away foil.
